Production Area: Lake Trasimeno – Umbria
Harvest Period: in the month of October
Harvesting Method: hand-picking and with mechanical facilitators
Crushing Method: continuous cycle system, cold extraction
Storage Method: store the product in a cool place, away from light and heat sources.

The Senses

Color: light green with golden reflections.
Smell: herbaceous fruity with a delicate scent of freshly cut grass and lettuce
Taste: in the mouth, it is contained and soft. The light bitter notes and the gradually increasing spiciness close with soft and almond tones.

Pairings

Perfect for seafood appetizers, fish carpaccio, first courses with mollusks or shellfish, grilled vegetables, vegetable fry-ups, fresh soft pasta cheeses, biscuits, and baked sweets.
